Artichoke Jalapeño Tuna Salad
This crunchy and spicy tuna salad is delicious by itself or made into a sandwich.
Each 1 cup serving only has 141 calories in it. It is low in calories but high in flavor and taste.
ARTICHOKE JALAPEÑO TUNA SALAD
2 cans (7-ounces each) solid white albacore tuna, packed in water
1 cup diced celery, from about 3 stalks
1 can (14-ounces) artichoke hearts, packed in water, chopped
1/4 cup fresh lemon juice (from about 1 lemon)
1 bunch of flat-leaf Italian parsley, chopped
2 tablespoons mayonnaise, (I prefer Hellman's Best Foods Mayonnaise. The regular
version not the low-fat version)
1 tablespoon chopped jalapeño, you may used canned or fresh. I often used canned for this recipe. If you would like it less spicy then use 2 or 3 teaspoons chopped jalapeño.
Combine all of the ingredients in a bowl and mix well. Serve with either celery sticks, pita chips or make a sandwich. A great snack or meal.
Per 1 cup serving: 141 calories, 5.1 grams of fiber, 53% Vitamin C, 10% iron, 19.3 grams Protein
