Celery Root, Apple and Parsley Salad

I was trying to figure out how to give directions to julienne the celery root for those that don't have a mandolin or know how to do it with a knife. I came up with a cheese grater! So I just retested this recipe using a cheese grater and the only change I had to make was to peel the apple because the peel wouldn't slice as well in the grater as with a knife or mandolin. (And by the way, if you're looking for the best mandolin it isn't one of those expensive metal ones. It is the very affordable plastic ones made by Benriner)

I made this recipe below to serve 2. You can easily make a larger version by just adding more celery root and mayo. This weekend I made it to serve six and still only used 1 apple and 1 head of parsley. So if you're making a larger batch just increase the celery root, mayo and yogurt.

I haven't tried this yet substituted celery for the celery root, but I will soon. Maybe in a more chunky version with everything kind of in a large dice.

I originally made this to accompany salmon quiche but it is a refreshing side dish to almost anything. Each 1 cup serving is only 1 point*.

Celery Root, Apple and Parsley Salad

Makes 2 1-cup servings

1 cup grated or julienned celery root
1 apple, grated or julienned (1/2 cup to 3/4 cup)
juice from half a lemon squeezed over celery and apple
1 bunch flat-leaf parsley, leaves only, just chopped a little
1 teaspoon light mayonnaise
1 tablespoon non-fat greek yogurt or non-fat plain yogurt
1/4 teaspoon kosher salt
freshly ground pepper


The lemon juice prevents the celery root and apple from turning brown, so be sure to squeeze it over right after you grate or julienne the apples and celery root. Place all ingredients in a bowl and combine well. Can be made up to 6 hours in advance.
