Fiddle Buttermilk Ranch

Buttermilk Ranch Dressing with Heirloom Tomatoes
on Watercress Salad. It is also wonderful on Spinach
or Butter Lettuce.

With regular mayonnaise, 1 tablespoon of this dressing only has 14 calories and is zero points*. If you want to reduce calories further you could use a light mayonnaise if you wish. I don't like thick dressings so this is just how I like it. It has so much more flavor than a bottled dressing. You can make it on a Sunday and use it all week. I made this for events and called it a Buttermilk Vinaigrette. But it is truly just Buttermilk Ranch and so wonderful on spinach, lettuce or all vegetables.

It takes about 5 minutes or less to make. So this isn't something that takes a lot of cooking time and it is so fresh.

FIDDLE BUTTERMILK RANCH
Makes 1 1/3 cups of dressing About 22 1 tablespoon servings

2 tablespoons mayonnaise (light or regular. I always use Best Foods)
2 teaspoons Plochman's stone ground mustard or your favorite coarse mustard
1/4 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/4 cup rice vinegar (NOT seasoned)
1 cup buttermilk
1 punch Italian flat-leaf parsley, leaves only, chopped

Whisk the first 5 ingredients together in a large bowl. Whisk in the buttermilk and parsley and combine. Lasts for up to a week in the refrigerator. Great as a dip for veggies or a salad dressing
