Strawberry Rhubarb Compote

This recipe is a cinch! The hardest part is slicing the fruit. Then you just cook it for 5-7 minutes and it is good to go. I love eating it warm but it is also good cold. Warm foods are more filling so if you're looking for the "full" feeling eat this when it is warm. You can put 1/4 teaspoon of sour cream on if you feel like you need some kind of topping. That small amount is still zero points.


Strawberry Rhubarb Compote

Serves 6

3 cups sliced strawberries
2 cups halved and sliced rhubarb
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 cup sugar (if it is too sweet for you, you can reduce sugar to 1/3 cup. Points are still the same because of size of recipe)


Place all of the ingredients in a heavy bottom sauce pan and cook for 5 to 7 minutes on high to medium-high heat. Stir occasionally with a wooden spoon.

Use a half-cup measuring cup and put into 6 half-cup sized ramekins. Garnish with sour cream and cinnamon if you wish.

Serve warm or cold. 1 point*.
